Short Description | Pizza flour made from the "soul" of wheat ideal for the preparation of doughs that require leavening times from 10 to 18 hours. Anima di Grano flours, MIDI, are obtained from the careful selection of foreign grains with a high protein content to guarantee excellent stability and high absorption of liquids, favouring optimal extensibility. These flours are ideal for the preparation of Italian pizza by the plate, pizza by the metre, pan pizza, Roman-style pizza in shovel and focaccia. Best proofing results at 20-25° for 14 hours. This type 002 is the coarser of the two ANIMA MIDI varieties. |
