| Short Description | Zampone is an amazing delicatessen made with pig's front trotters stuffed with a mixture of lean meats, belly and back skin and neck fat. It has the same dough as the cotechino but the difference is in the processing. Instead of using the casing, the paw is steamed and stuffed into the skin of the pig’s forefoot. It is from this process that its name derives. From the typical gelatinous consistency, its flavour is intense and its scent persistent.
